
Prepping Sweet Potato Toasts.
Some friends have been asking me how I make my sweet potato toasts.
I have tried slicing the raw potatoes with my knife, but that’s hard. I have used my mandolin and it finally broke, so I decided to half way baked the taters. I used a parchment paper and wrap about 4 medium sweet potatoes at 400 about 20 to 25 min. You have to keep a watch for them because you still want them firm to be able to slice them about 1/2 inch thick.
I saw a lot of pictures on Pinterest so I can’t say it’s my idea but I can keep them an E if I use peanut butter junkie (fp) with blueberries and sprinkle with cinnamon, you could add a trimmy lite or any other protein shake for breakfast. You can also add 1/2 banana and brown sugar and sprinkle with chopped pecans for garnish. You just need to put in your toaster to finish cooking them or add in your air fryer for a few minutes.
I usually keep my slices in a tight container and have them ready for my week so when I want to use as toasts or fries they’re ready. I also use them to make a crust for my quiche (with egg whites). So versatile for a working outside the home Trim Healthy Mama.
