1 1/2 cups of egg whites
1 small diced zucchini and/or yellow squash
1 small diced tomatoes or 1/2 cup of rotel can
1 cup of seasonal blend veggies (green, red, yellow and onion)
2 tbsp diced jalapenos or green chiles from a can.
1/2 or 3/4 cup of pollito
Coconut spray or 1 tsp of coconut oil
8×9 glass rectangular dish
1/2 tsp of garlic powder
1/2 tsp of onion powder
Salt & pepper
Pre heat over at 375 degrees.
In a pan, sauteed veggies with coconut spray or use 1 tsp butter, once veggies have been partially cooked and seasoned with spices add in a well spray casserole dish. Then add egg whites to the casserole dish and pollito, making sure it’s spread out on the pan. Bake for 25 minutes or until golden brown.
Use this with a cup of strawberries for a delicious FP breakfast or add a side of fruit like 1 cup of mango or papaya for an E breakfast.
