1 1/2 cups of egg whites
1 small diced zucchini and/or yellow squash
1 small diced tomatoes or 1/2 cup of rotel can
1 cup of seasonal blend veggies (green, red, yellow and onion)
2 tbsp diced jalapenos or green chiles from a can.
1/2 cup of pollito (shredded chicken) or just omit it. I normally don’t use extra protein (update 5/16/22
Coconut spray or 1 tsp of coconut oil
8×9 glass rectangular dish
Update: use 3 tsp of Magaly’s seasoning mix
Salt & pepper to taste
Pre heat over at 375 degrees.
In a pan, sauteed veggies with coconut spray or use 1 tsp butter, once veggies have been partially cooked and seasoned with spices add in a well spray casserole dish. Then add egg whites to the casserole dish and pollito (use lean ham or chicken sausage for extra protein but it doesn’t need it), making sure it’s spread out on the pan. Bake for 25 minutes or until golden brown.
Use this with a cup of strawberries. Add home made salsa and a dollop of Greek Yogurt on top for a delicious FP breakfast OR add a side of fruit like 1 cup of mango or papaya for an E breakfast. When there is no fruit I love to add refried beans. It makes an excellent Mexican breakfast dish. 😋

I get 6 servings but you can make double or add more egg whites.
