Guacamole sauce

I’m sharing my childhood recipes but just now getting to write them down to share with all my Trim Healthy Mamacitas. This recipe is super light in fats, you can have a little bit more of 2 tbsp and still be on light S territory. I used a small avocado about the size of my palm of my hand. If you do the number just right, you could even use less to fit into an FP and E but who really wants to limit this delicious dressing to an E or FP, right?

I stand corrected, Pearl Barrett love the idea to make this fit into Fuel Pull setting and she helped to get the right amounts. A FP version will be coming out soon. (8/1/2021)

Ingredients:
1 small avocado (palm hand size)
1.5 cup of water (I no longer use cashew milk or kefir on this recipe since 6-1-2021)


1 big seeded fresh jalapeno
2 limes, juiced
1 lemon, juiced
Cilantro to taste (see pictures)
1/2 tsp of onion powder, 1/2 tsp of garlic powder, salt & pepper to taste.
And a good blender. I use the small individual cup to bend this small amount.

1.Put all ingredients in the blender making sure you saved the avocado seed, set aside.
2. Blend well and check the desire consistency of a dressing. Some  avocados are larger or smaller than others so adjust the desired liquid with either cashew milk (if prefer) or lime juice.
3. Put in a dressing container and add back in the avocado seed for freshness. Keep in fridge for a week, but just remember avocado can turn brown if left too long in fridge. The lime juice and avocado seed will also help it from turning brown so quickly. 

Enjoy it on salads, soups, tacos, eggs or omelets.

PEARL’S FP VERSION

Guacamole sauce, FP version by Pearl Barrett she calls it avocado-lime dressing. 

Our dear Pearl helped to get this recipe to become an FP version. Now, I can enjoy it with my E and FP meals. Use up to 1/4 cup on FP and E meals with no other fats added to the meal.

Ingredients:
1/2 a medium avocado
1 cup water
1/2 cup cashew milk
juice of 4 limes
2 Tbs ACV
1/2 – 1 jalapeño (she used 1)
1/2 bunch cilantro with stalks
3/4 tsp salt or to taste
black pepper to taste
1/2 – 1/2 tsp onion and/or garlic powder
rounded 1/4 tsp xantham gum
1 – 2 dunks stevia (she used 2) Pearl’s likes sweet but you can omit.

Follow process here of my original recipe for a Light S version. Note: I avoid dairy and cashew milk in the S recipe now. I like it much better.
