1 red bell pepper, diced.
1 yellow bell pepper, diced.
2 to 3 Roma tomatoes, diced.
1/2 of medium sweet or purple onion, diced.
1/2 or 1 of fresh jalapeno, diced.
4 limes, squeezed
Chopped Cilantro, salt & pepper to your liking.
Diced all veggies and mixed together. Squeezed the juice of 4 limes, and seasoned to your liking. Put in a glass container with a lid. It will probably make 6 servings but if you half it you can add some carbs to half of your mixture for an E.
Recipe is Fuel Pull as written and can be use on E setting; however, if you want to add black beans or corn you can use canned beans and white corn but make sure you rinse them both. I normally get half a can of each to add for E pico. Accompany with some baked corn chips for a snack or add to tacos with corn tortillas just make sure your meat is lean enough. My preference (baked fish or chicken breast -Pollito recipe). You can also add to your tostadas.
