
I was trying to copy Pearl on her quinoa sweet bowl but I bought a bag of super grains to see how would work for this recipe. This method is used to make “arroz con leche” a sweet dessert made with milk, cinnamon, sugar and white rice. You can easily change the grains to brown rice here but you would have to adjust the time of cooking as rice takes longer to cook.

Ingredients:
1 cup of grains
2 cups of water
1 cup of cashew unsweetened milk
2-3 tbsp Better Than Brown Sugar I used Esther Smith https://from-caterpillar-to-butterfly.com/2020/04/19/better-than-brown-sugar-fp/recipe
1 tbsp of gentle sweet or adjust the desired sweeteness
2 tsp of vanilla extract
Ground cinnamon to taste or use 2 sticks of cinnamon on the pot.
I used the top stove but you can use an Instant Pot for this.
In a medium pot, toast the grains with a generous coconut oil spray, then add water and bring to a boil. Cover up till the water have consumed. Then add cashew milk, vanilla, better than brown sugar or adjust sweeteness to your liking. On medium low heat cover up and let it simmer for about 10 minutes or until desire tender grains. You can add more cashew milk if need be. Serve on a bowl with nut creamer, berries or fruit and sprinkle cinnamon on top. This make about 3 to 4 servings or devide in little 4 -3/4 cup containers to have for desserts. Mine came out too sweet so make sure you put less or more to your liking.
